Default Scarab overheat issue new rebuild

My friend has a 77 Scarab 30' twin 454s port engine rebuilt last year runs good no problems. Starboard engine new rebuild heats up getting on plane. stock oval port heads, Quadrajets, stainless marine manifolds, crossovers, no thermostats. Some genius along the line mounted an oil cooler, p/s cooler side by side so water comes from strainer to w/p to coolers into trans cooler then into crossover. My thought is the water having to change direction so many times is slowing it down & with no thermostats it's just dumping before it can transfer any heat. My friend bought the boat rigged this way & asked if I could help him figure it out. I about crapped when I saw this jigsaw puzzle. Randy
