How big of a cam can I do with EMI with the short risers..

I am going to do alittle more motor work soon, and Im going to change the cam..what cam can I safely run with the EMI with the short risers..Its a 502..Should I just run a cam equal to the 500hp cam?

A good off the shelf cam would be Crane 731. Its very close to a 500efi cam.
Don't run an HP500 carb cam. It will revert water.
