I will be replacing the distributor pickup and coil, then I feel I'll be ok.

You might have a similar issue.

Sounds kinda backwards from my problem. Sometimes my boat misses when I try to go hard out of the hole, then is a slug getting up on a plane. Once it gets past 3000 rpm it gets right up and will rev to 4500 no problem.

First thing is check the timing. Base timing is great but check total advance also. Total advance is a little more important than base. Also could be carb or ignition.

Sounds like yor timing is retarded. Possibly the distributor is off a tooth. You might have to time it the old fashioned way.

Remove #1 plug
Turn over to TDC, using a piece of wire if you don't have a gauge
Make sure distributor is aligned with #1 plug wire (mark distributor base)
Then mark your timing mark
Then you will have base timing at zero
Fire it up and set 10* initial advance and you should be good

Hope this helps

Carb is too rich... When motor is cold, it runs leaner.. Take off, motor gets warm, and then its rich.

Ignore above untl you put a timing light on it. One tooth off can be adjusted by turning the dist anyway.
You need to find out what the timing is at full advance and set it to 34*. Setting i to 10* base without knowing what full advance is a waste of time.
