Hello guys what reading should I have at the gauge with a 160 thermostat is reading in idle 175 is hot in south Florida is that reading normal or it should be at 160 ??

Are you closed or open cooled, and what motor?

I would stick with the 160, and keep you raw water pump maintenance up to date
So long as your under 190 your ok
