700SCI Fuel Pressure (Guardian Mode)
 
Saw an old post for this but only one solution on it so trying again since several had this issue.

2007 Supercat with Merc 700s and stage 3s. Anytime I get over 3800 rpms the boat goes into guardian mode for low fuel pressure. Code clears when I get back down to idle. I've replaced the fuel/water separator, high pressure fuel filter, along with fuel pump after it kept throwing the regulator and finally burned up, over half a tank of gas per side, but i still have the same issue. It's just odd because both sides are doing this. Talked with several owners prior that ran 125+ with zero issues. At a loss and my next step is to get it to a shop I reckon, I just feel like it’s something stupid I’m missing.

Check the regulator and the check valves at the tanks. It would be odd that both regulators would commence the same behavior at the same time, but it's something to check. The check valves can corrode or collect crud, and this will manifest with the behavior you're describing.
