Normal water temp on 350 260HP?

I had the 260 HP in my 2102 VIP Victory and now am putting in the 300HP MPI. I noticed that my water temp on my gauge only climed to about 140-150 degrees. Is my gauge wrong, or is that possible? Is there an optimum temp to be looking for? Keep in mind I now have a 350/300HP MPI. Thanks. J.

My 260HP 350, is LUCKY if it gets to 140, sucking up 80 degree Florida water, at lower RPM, runnin real hard it get to about 150. Not sure about the MPI, but the T-Stat in the 260 is 140 degree, so 140-150 is correct, The MPI may need a hotter T-stat?????
