thermostat replace

I have just replace my thermostat (160 degrees) with a new one on a open cooling system. I have notice that my temp gauge now moves from 150 - 185 degress back and forth as I drive at all RPMs Is this normal , I have not notice this with the old one on , It just stayed at 170 degrees.

Motor that I am running is a 4.3 Mercruiser with a Bravo Three Drive.
