That's a good question. I don't know what Merc says but, fom my own expereience with a 502 Mag, about 240 is where the oil pressure drops at an idle after a hard run. I don't like to see it get much above 230. I think that is OK if you use a good synthetic. I run Mobil 1 15w-50. I measure the oil temp at the remote filter.
