Is this way off?
 

Just bought an 88 Chris Craft Stinger 31' with twin HP 500s. The props are twin 3 blade 24" pitch. One guy told me that these are way off and he would not even leave the dock without going to 28 - 30".
Is this correct. I don't have a good feel for prop sizes.

24" props does seem small for your rig but, why not try it for yourself and see what happens. You should be able to plane easily with them and once underway in a safe area see how much throttle you have left at about 5000 rpms. If you're pegged then you have the right props. If you have lots of throttle left then you can use bigger ones. Only testing will find out what works best. Good luck.

I'll give that a try next time I'm out on the water.I assume the drives should be trimmed part of the way up?

Drive angle changes the thrust angle.

Drives in will aid in planing off from low speeds.
Mid speed cruise usually likes a tiny bit of trim.

Top speed will depend on many factors, but usually you go wide open with the throttles and begin bumping the trim up a little at a time to bring the bow of the boat up and free the hull. If prop slipping starts, you are trimmed too high. If porpoising starts,you are trimmed too high.
