Fooling the computer...fuel & water temp?

I just bought a 98 454 mercury out of a wrecked boat. I am thinking about putting it in my jeep.

These motors have fuel coolers on them. What is the highest temp that the fuel can be and still run well? In a vehicle like a jeep or truck, I won't have the ability to cool the fuel. It will be 100 degrees or less most of the time.

This motor is programed to run at 160 degrees. In a closed loop cooling system like a jeep or truck, it will be 210 degrees. Is there a way to fool the computer into thinking the water temp is actually 160 when it is really 210 or more?

I'm really ventureing into new areas for me. Does anybody have experience with this?

Thanks for the help!
