MPI Fuel/Air Ratio

97 7.4 liter mpi

I have the above engine with stock exhaust and I would like to measure the fuel/air ratio, can someone explain how to accomplish this with the stock wet exhaust.?

454 cam change

1997 7.4 liter mpi has had a performance cam installed, the rpm fluctuates by about 50 rpm, is this normal??

The new cam is a crane 168731

I pulled the throttle body and there is a small amount of engine oil,(maybe 2 tablespoons), in the intake plenum right at the throttle body opening.

Is this a concern??
