You could but I think it would be cleaner if you drill & tap the manifold. Looks like the boss is there.

Actually with the setup you have it is needed....

Actually with the setup you have it is needed. Without it there is no circulation in the block at all until the thermostat opens. A better option is a t stat housing that bypasses the heat exchanger ...
