I would think you should reach the mid to upper teens...not sure what the boat weights though.
take a look into the intake kit from DBR to stop the water ingestion on the XS's at speed
...

the new 300xs's are the way to go IMO. and cp not sure how old of 225's you have dealt with but they did call the opti pops for a reason LOL... I had one on my last bass boat... sold it and two weeks...
