I put too much grease in one of the trailer bearings, and I think it blew out the back.
What's gonna happen if I drive 30 miles, dunk her in the ocean, and drive 30 miles back today?

As long as you didn't blow the seal out, you may get gease on the brake linings, maybe not, and will still have a sealed hub. Depending on how much grease you are talking and your trailer load, may affect the braking power.
If the seal did blow out, then you'll get water in the hub when you dunk it. For your 30 mile trip, I wouldn't worry. Just tear into it when you return to check the seal.
