That is cool. How deep is that water?
Is that a pre race video, or durring the race? I ask because you only see the other boats along the shore, none on the water.

The water is shallooow about 6 inches or less in some areas. If you watch out of the right hand corner of the screen you'll be able to see the rocks right under the water. These guys race a clock for best time due to the river channel being to shallow, and narrow. They do end up drag racing in some instances though. When the water turns brown your in the real shallow stuff. Dark green and it's pretty deep.

How long does a jet impellor etc. last in water like that at those speeds?

The last all season usually they just open the bowl and check the sharpness, Very rarely do they get replaced. They run a stainless steel impeller.
