What is the air/fuel ratio you should look for at the different throttle settings, Idle, cruise, full throttle.

From my study. Optimum - 12.8 peak torque
Optimum -13.2 peak hp

That depends on if the the motor is supercharged or normally aspirated.

Tell us what setup you have and then we can advise accordingly.

622CI, 12/71 mooney, 8 psi boost, 30 deg. timing locked out,
2-1095 king demons, alum, heads, full jessel valve train, CMI 4.5 in E-tops fully dry, looking to run it around 5500 - 5800 rpm

You can throw my numbers out the window. My opinion was for a n/a set up.

You want to be around 13-1 at idle and as you go up it needs to richen up so that you end up around 11.8-1 at your max rpm.
