Default Holly vs. Mercarb/Weber

I'm trying to decide which way to go on my carb. I've got a small big block (439). Here is the combo I've got:
9.8 CR
AFR 265 Heads
Weiand Stealth Intake
Custom Bob Mandara Cam
I'm planning on proping the boat around 6000-6200 rpms

I should be around 525-550 hp and would like to know if I would be handicaping myself using the 750 weber or should I just skip that and use a 780 Holley?

you will need the holley for the benifit of the mods...
