Generally we are interested in the oil temp that is going back into the engine to lube/cool the engine. Therefore you would put the sender after the oil cooler on the way back into the engine. If you have a remote oil filter mount, there are usually extra ports where you could place the temp sender. This is assuming your filter is after the cooler.
