The mid cabin is a tad slower but not by much. A lot has to do with the wind drag. If the front cover is open, you WILL lose 2-3 mph. With is closed, you will only lose 1-2. The air is forced down into the cabin or against the cabin door.
This loss of mph can always be taken back by more power!
EagleDM's with the 525 runs about 80-81 and LiveWires runs about 82 with a Raylar 700 and Whipple.
BTW, both boats are for sale.

I currently have the closed, but for me the forward space is mostly wasted or storage with the wife's "junk", and always hot. I think the MCOB would be more usable and get the best of both, but still like the speed and handling & style of closed.

Speed is almost the same that couple of MPH won't matter, the handling would be the same and the style well the closed does look good but I only have had the front cover off twice so far.
