Default HP 500 Clone What water temp?

I had built for me an HP 500 clone, what temp T-stat should I be running with my crossover setup? Previous engine was a blower motor and I ran a 120 stat. From what I have been reading cold cylinder walls and hot pistons make for some unusual war patterns. Oil temps are not an issue at all, my oil cooler is way big and my oil temp and water pressure are well controlled.

The HP500 comes from merc with a 140 deg T-stat.

140* would be a good starting point. Too cold of oil is almost as bad as too hot.

mine runs about 140-150 with a crossover w/by pass and 140 thermostat with a couple small hole drilled in them...ran way to cold before adding the bypass and thermostat
