Default Hatch and Bench Seat Rebuild

I知 looking to rebuild my back hatch and rear bench seat. I would fabricate both and then have them foamed and re upholstered.

For the hatch it is flat and would be fairly easy to make but I知 still torn on a solid hatch or a butterfly hatch.

For the rear seat i would basically rebuild based on the old seat design and have that upholstered also.

It is an older boat, both were made out of plywood and are in bad shape. I did a search and came up with about five different materials I could use so I知 looking for a little guidance.

What material should I use for the hatch?
What material should I use for the seat?
What type of fasteners should I use?
Are the steps rough build, sand, glass, sand, prime, sand, paint?

I know these are pretty broad questions but any help would be appreciated.
