Unless you make really good friends with the bottom, you shouldn't need to change your impellor any more frequently than anywhere else.
It's good practice to change it once a year or every 100 hours, however, simply because it is a wear item.
Now, if you fill your motor with sand frequently, that's another story.

BD is right on! Salt water has nothing to do with it. If you are NOT tilling the bottom, which happens alot in Fl. with all the shallow water, then the impeller should last a long time. This is in reference to the raw water pump on M/C big blocks.

I say once or twice a year... just preventative maintenance ya know... Better safe than sorry!

Use Globe Rubber Works "Blue" Impellers. They last much longer the the standard black-rubber impellers and they don't cost that much more. BoatFix.com sells them at a discount.
