Default Removing thru hull depth finder. Fixing the hole?

Like the title says. I am planning to remove my old school thru hull depth finder. I will then need to plug what looks like a 1.5" hole in the hull.

What would be the best way to do this? I already have the engine compartment stripped and am about to start reinstalling the transom in the boat so might as well knock this out too.

lay a few layers of glass on the inside cut a couple of patch pieces and glass them in the hole from outside until flush. one light piece of cloth glassed over the outside. vinylester, not poly.
