Default Motor tuining in California

Anybody know of a shop that can help me tune my motors? They are bbc bored over .40 with retro full roller set up. 177 blowers with Holley 950 carbs. stainless exhaust. DUI ignitions

Problem is they are either running to rich or to lean spent three months trying to tune them. At this point I am afraid to run them hard because it took almost three years to get the boat together. and I don't want to blow the motors over not knowing!!
