Why do 500EFI motors use a 140 degree thermostat?

Why do 500EFI motors use a 140 degree thermostat?
Every motor Mercruiser makes takes a 160 degree thermostat so why do they show the 500efi using a 140? What is so different about this motor?

Always thought the carbed motors use 140*, and EFI's used 160's. Odd
