Every motor Mercruiser makes takes a 160 degree thermostat so why do they show the 500efi using a 140? What is so different about this motor?

Always thought the carbed motors use 140*, and EFI's used 160's. Odd

All my motors have 140's in them. Mercruiser book also calls for 140's. Wonder if 160's will burn the fuel better.
