Gelcoat is best.

Acrylic urethane will work if only left in the water for short periods of time.

I was thinking DuPont polyurethane that I have used on vehicles but not sure if it will work on the bottom of the hull as for toughness/durability.

I guess gel on the bottom and poly on the sides and deck? If you use gel do you use non wax untill last coat then use wax?

theirs a number of ways..you can spray non wax until the last coat ..or you can mix duratec clear into the gelcoat and make several pass's ,,this way makes it easier to sprap and it goes on alot smoother and makes less sanding..
