Default Which Gauges should I add on top of the standard 7

Carbureted 502 single engine, the dash has Speedo, Tachometer, Water temp, Oil Pressure, Fuel level, trim, Volt meter, Depth sounder.
What gauges would you recommend adding for safe monitoring of the motor?

Would you also recommend adding any gauges to the motor like fuel pressure?

Should have the above gauges along with the ones listed below for safe monitoring.

Drive oil temp,
Water Flow rate
Vacuum
fuel consumption rate
exhaust gas temp (1 for each pipe)
Air fuel
Throttle position
Closed monitor video (2 cameras per motor, front left, right rear)
horsepower gauge (like what the Bugatti Veyron has)

As others have stated, oil temp, A friend recently had his 454's built to 496's. I told him he really needed to step up the size of the oil coolers and add oil temp guages. He was reluctant at first to spend the extra money but I finally beat him down enough and he relented. Now he is so glad he installed both but especially the gauges. The gauges allowed us to catch a major f-up by the engine builder that otherwise would have likely gone undetected until it was too late. The port motor would not build oil temp like the starboard motor. Long story short, the builder left the bypass opening in the filter pad empty. No 30 lb. bypass valve and no plug. .
