Racng Cat for Trolling Offshore

Hey Folks, I have been looking for quite awhile for a boat that will take big water and safely fish 40 miles offshore in 6 ft seas, 4ft wind chop. I think these boats ROCK IT!! I'm not a racing guy, but I take my jetski 40 miles offshore. With a couple of kids to accommodate, a 30ft motion or skater seems like the ticket to take me out to the gulf stream and back safely and troll offshore. a 30ft monohull is less efficient designed and these are tournament fishing machines- Why not a big cat instead? If there is some reason why this doesn't make sense, this community would know. All of the fishing cats are slow like dogs. The only reason I see that this approach doesn't make sense is trolling speed. Seems like the prop pitch is too high and will bog the motors at 7knots, Maybe change prop pitch so I can run 7knot troll and 70 top end? I understand this will not be a lot of folks cup of tea here, real neophyte here searching before making an investment in a 30 ft boat doing something different. Just because it hasn't been done before doesn't mean it cant be done. Your input is appreciated. Thanks, Pete

Jet skis 40 miles offshore, what's to see out in the middle of the ocean on a jet ski? Marlin?
On topic, I'd be concerned about the two little pointy bits up front staying above the 6' waves at troll speeds. They're designed to run on top of the water a lot faster than fishing speed. A big V-hull has a nice flare to cut through the waves and float on top, the high speed cats are much lower to the water at sub planing speeds. That's why fishing cats are such big high things up front. I reckon you might take some water over the bow.
