Total restoration of 1993 Profile 33"

I am pretty much in total restoration mode on a 1993 Profile 33' v-hull. Stringers were rotted, so total restoration. Most would say the boat is not worth it, but its got an amazing paint job, new engines and drives, so I am going ahead and rebuilding this one. I have looked at hulls to swap, but most have issues.
So I am looking for ideas in the cuddy and cockpit. Figured I would find a bunch of ideas but there does not seem to be a lot of changes to the interior of boats in the last 30 years.

I've been doing the cockpit and cabin in my '79 Formula 255 Liberator....lots of plywood. All of the plywood is being replaced with Starboard...which is impervious to water and is quite a bit lighter.. The Starboard and water proof closed cell foam rubber are the most significant changes. Also...the newer vinyls are more UV resistant these days.
