Engine swap wiring from 496 HO to 540 BBC

I'm swapping out my 496HO and going to my 540 engine. I'm going from EFI to Carburetor. Also going to an MSD Digital 7 ignition box.
I know that much of the wiring will have to be changed. Do they make an adapter that plugs into the round multi connector that stays in the boat so I can just plug in there? Or should I just plan on running all new wiring from the motor to the helm.
Oil temp, Water temp, Tach, Voltmeter, Fuel Level, Oil Pressure, Water Pressure. All of these gauges are pretty easy to figure out.
What do I do about the trim gauge and trim limit switch? Those wires went through the 496HO computer, or just cut into the trim sender wires and route them directly to the dash gauge? It would be cool if I could find a wiring diagram for the trim sender and trim limit switch.
