Default HP 500 carb oil temp not rising

I've verified that my gauge is working and tested it. my needle only comes off of the bottom of the gaffrig gauge after running about 70 mile an hour for five minutes it will warm up to 140. I have a remote oil cooler as well as a remote oil filter housing located on the back porch side of the 500 HP From what I gather there is a thermostat in the oil filter mount just looking for anybody with suggestions on how to get proper oil temperature. I'm running standard Cooling with no crossover. Any help would be appreciated. Water temperature is run anywhere between 140 to 165

i would replace the oil t stat,they can stick open or closed.

yes.there is a spring under it and has a plastic peice that is retained with a snap ring.when you go to your local merc parts dealer ask for a print out.
