Default Procharger Crossover and Intake Manifold

The procharger instructions say to install the coolant sensor where the water pump bypass hose connects to the intake manifold.

Why?

Isnt plugging that blocking full coolant flow through the engine?

I am also not happy about running without a thermostat.

It won't plug it. If there's not an npt port to use you may need a T fitting.
