I'll admit that I'm not familiar with the offshore racing circuit and scoring, but can someone tell me how a 3rd place finish and a 2nd place finish at one event earns the world champion title?

It goes by total points for the season.

Actually, teams start the OPA worlds, as they did with the SBI worlds, with a clean slate. The combined points from each race, in this case points from the Friday and Sunday contests, determine the world champions in class. In the event of tie, there's a bit more nuance but those are the basics.
