Default External Oil Thermostat Recommendations

I have a 20' Cigarette and a newly rebuilt 454 with a Blower Shop 250 blower. It should be making about 675 HP, dyno is in 2-3 weeks. One thing holding up the dyno is the oil thermostat. We pulled the thermostat out of the water housing on the front of the block and are looking to use a oil thermostat to regulate oil temps. I want to retain the oil filter positioning that I have now. Who has used an external oil thermostat and what is the best solution? Also what temperature thermostat should I get? 185, 205, or 215 degrees? Thanks
