So my wife has suggested we get a bit bigger/more comfortable boat. I love my current ride, a 24’ Superboat CC, she does not. Thinking 30’ max LOA performance center console. Seating for 6. Arch as opposed to a T-top (not into fishing at all).
Strictly looking at the used market. Deep V a must as it is frequently rough here.
I like the Concept 27 and 30. Are there other builders I should consider?

It's over 30' but "thisistank" (screen name)'s daughter/ SIL has a 33' Cafe open - 1999 with twin 250's

Check out a World Cat. The 29 will ride better than most 34' V bottoms and you get a huge deck. I had a Glacier Bay cat a few years back and loved it. They are different looking, but don't cross them off the list till you and your wife ride in one.

Take a look at the Donzi CC’s. We own a 35’ with the front cuddy and really enjoy the boat. They make a 29’ and a 32’ also. Have a different t top options. Some have an arch. Ours has been repowered with 300 verados and DTS.
