It's like 'warpathrace' or something similar. I've searched all over the Internet. . . Nothing.

One part butter, one part flour. Bring to simmer, until the color JUST changes - imperceptibly, nearly.

Contact DARREN US1 or T2x.....he was the commentator for Phil Lewis of Needle Nose Productions who has since sold his library but they can point you in a direction I am sure. Good Luck

What do you mean, close enough . . ? ?
It's perfect. Now whisk in 2 cups milk, a grind or two of nutmeg, and white pepper, and you have Bechamel; the classic french white sauce.
Substitute chicken, or other clear stock (fish, vegetable, etc.) for the milk, and you have sauce Veloute'.

Next chapter, egg-thickened sauces. . .
Nice that you picked up on the tie-in to the screen name.

I thought "rouxsterre" was a "French" way of spelling Rooster!
