I currently have 2 HP500 carb motors that I am having rebuilt right now, I want to make around 600HP---625HP each motor, but reliably. What are your suggestions? Boat is a 33 Powerplay (V-bottom, non-stepped hull) The boat runs 84mph and I would like to see 90+

Make them 540's with decent heads or put blowers on them.

me too... somebody must have a proven cam/head/intake package that can bump this up to about 625 pretty easily...

Port the heads.install 2.300 intake valves.Mill heads to 113ccs to bring the compression up to about 9.3 to 9.4 to 1.Throw 800 holley in garbage and replace it with 850 four corner HP Holley.Put a cam around .600 lift, 240-250 @ .050 on a 112.And have a nice day.I have done about 5 pairs of these conversions.Works out great.Oh and you have to replace rev limiter with 6000 limit.

For each motor and completely disassembling and assemble about $4000 to $4500 all said and done.Parts, labor, paint, and complete freshen up.Only extra would be dyno time.The ones i have done make about 620 HP.And you can still dashboard them all day.
