Can't help ya with the fishing but Cabo is one of this beach bums favorite places. Weather is usually great. Some fantastic restaurants on the beach and on the cliffs above the ocean. Good luck!

I went fishing there a few years ago in the fall.
Fishing was great.
Here is a link to the charter I used.
Salvador, the captain, was very knowledgeable.
The charter was not very expensive, but the boat is not a 50ft viking either.
When I was there we fished about 1-2 miles off the beach.
Caught some small tuna & good sized dolphin.
Also landed a 160lb Striped marlin, and dropped another.
Saw some whales too.
His boat is only good for a party of 2-3, otherwise it gets too crowded on board.

I've fished there four times, each time on a different boat, and it's been amazing every time. Seems to me the "Solmar" fleet is the biggest player in town. Basic boats, but knowledgable crews. Have fun!!

We chartered with these guys for a day when we went down last year...

They were ok, guides were average at best. Left at 7am and we got approached 2x on the way to the docks to buy yayyo!! At 7am - only in Cabo!
Oh, and my buddy caught this guy while we were lookin' for the "big stuff", it was damn good eatin' later that day!!!

The OTHER great motor sport is the BAJA cars. As you walk down the main street of Cabo San Lucas, Open Throttle has a car sitting there. For about $400.00 you get about 10 laps on the track. Wear you old clothes and be prepared to drive the crap out of these things on a desert track. High banks, good straightaways, a few sharp turns and a real test of your driving skills. NO wimps on this one guys.

No matter which you do you will have a great time. Watch out for the pigs, cows and donkeys!
