Seeing how nobody else ( the Builder, The Racers or Any other Experts) have stepped up to help you I will tell you what I know from experience of my own boat and stories from rick about how it came about to turn left. From what I understand the tempest and the Y2K's all started out turning right hand. Then when they built Garry's boat Superbaby the performance rep from Mercury racing was at Superboat with a trailer full of props, drives, and spacers. I guess they had been testing that pretty new 600sc and had a bad lean like what you are experiencing. The rep recommend turning left and it worked so well that every Y2k built after that left the factory turning left.
I've never had any lean one way or the other and I turn Left. You might have to play with your weight distribution but I don't think you should worry to much about low speed and just make sure it's safe and rides straight above 50MPH..
The hull mold that the Y2K's are popped out of is over 30 years old and has the be propped up and blocked and bandaged before every boat is laid up. It is impossible for any two boats bottoms to be identical. That's why some are faster then others and what works on one boat might not work on another. Keep playing with your setup and maybe you can get it all worked out...
