Default 32 Victory handling in the chop

I am looking for a 30ish footer boat to run the ICW in South Texas. Much of the ICW is really smooth, well protected canal like waterway. But, and this a the big but, one must cross various bays, some of then quite large and more ocean conditions than canal. We do this in my 21’ ski boat. I dont recommend it. So….my question is how does the 32’ handle the 2-3’ seas we typically find in the big bays like, Galveston, Matagorda, and Corpus Christi? Thanks in advance for sharing your experiences.BTW i had a 31’ Scarab that handled Galveston Bay quite well, but my impression is that it was a much heavier boat.
