302 Boss Upgrade ?'s Looking for Advice

Apollen,
First off welcome to the board.
We have all been in your same shoes as for power and speed.
You may not hear what you want to hear, but will get some good honest advise here.
If you really like your boat and plan to keep it a few years I would repower it. It you think you might sell it in a year or two, I would enjoy it, leave it stock and save your money for a new faster boat.
My experience has been that your boat is worth very little more with new larger motors than it is in the current stock condition. You have to use and enjoy it to get your money out of it.
I have found a guy in Florida that I have a lot of respect for. He is a certified Mercury mechanic and also builds some exotic motors as well. He is very down to earth, shoots straight and will tell you exactly to what degree you can change your current engines to get more power and keep them reliable. He knows blowers as well, and may even know how to help you move the current engines if different ones are better suited.
At this time I would not trust anyone else with my boat. I will be pulling a friends 42 Sonic down in a couple of weeks for top end work on 500's. This guy is good. He has seen and done it all and knows what works.
Give him a call. Tell him "Dock" sent you.

I agree with DOC resale will not be worth what it costs to upgrade engines especially if you go with 500s which will get your boat to about 80. At that speed handling is an issue with that hull I would sell and buy a 33 with your boat and the price of 500s you will be close, and have an easier boat to sell later.
