Very newbie question here, but does running a PS pump without fluid in it damage it ?

This is probably a 95 unit on a merc 502.

I had a PS fluid leak that took a long time to track down. The pump would empty itself in a matter minutes, so it got run quite a lot while empty.

Running it empty for any period of time will ruin one for sure. The only way to really know if it is bad or not is to fill it back up with fluid, bleed the system if you can, and see if it works. If you have a bad whine to it while turning the wheel, the pump is on its way out.

You have to have the engine running of course...
