Done properly as mentioned and avoiding any moving parts can be just fine. Just a little more finicky when it comes to detailing to keep looking fresh. Just not my personal preference. I've come across some where no precaution was taken what so ever and a mess to deal with especially when it comes time for rebuild. Soaking in carb cleaner just makes a mess and takes longer and have to be extra careful during assembly. I admit done right they can look nice though.

I don't see the big problem with the painting of the carbs just mask them off good top and bottom. I would leave a dab of grease on the cams no paint will stick and maybe a drop of oil on the throttle shafts at the base plate..
