Welcome Moe. Share some pics of your 311 and tell us where you are.
I just recently bought my '91 311 but the previous owner had the passenger handles, step and seat supports painted white. Really nice look in my opinion.
The other things that a bunch of us have done/are doing is painting the forward hatches, rub rail, and sometimes the engine compartment vents white.
Then you can get into dash mods, new gauges, re-coloring the whole dash, and changing the cockpit colors. Like others here, I'd like to add oil temp and water psi gauges, and I don't like the split layout of what's on there now. In order to have a more efficient gauge scan, I plan on placing port/starboard guages next to each other. Both oil psi and water temp gauges will be on one side of the dash, and oil temp and water psi will be on the other. Voltage and fuel level aren't primary and will go somewhere, just not sure where.
You could also do a complete hull wrap and put any type of color/graphics you wanted on the boat. Check out the fishies on this Fountain I saw recently.

I like the painted bolster legs! I would love to see a dsah that some has painted white with the cabin door painted to match. That wrap looks great those should be much less that a paint job!
