Default Planning my winter already

Well I've come across too many little issues with my sr1 that I'm going to do some deep digging and upgrading this winter. Sick stinger is gonna let me put it in his shop one afternoon to pull the motors, gonna give them a once over maybe change intakes and exhaust if the right deal comes about, inspect couplers, mounts, stringers, transom, etc. It looks like they had 4 diff speedo pickups on the back of this thing over the years so those holes will be filled, may remove the st platform and build an aluminum one. Really hoping to find some mechanical indicators for the tabs and drives.
What can I use on the dash? The black is foggy and scrathed can it be restored or should I paint it ? Where can i get a dash panel to put new gauges in ? And where can i find a replacement rub rail ? Thanks guys hopefully it all goes well
