I have the HP500, has been rebuilt to 509 and is about 525hp. Rebuild was pretty much stock rebuild. I can get 65 all day long no matter what load. I have a drive shower which scrubbed a little speed, and carry a bunch "stuff" in the cuddy. Prior to the drive shower and all the clutter, I could get about 68 - 70 and it would start to chine walk.
Recommend steering first, then horsepower. My steering sucks compared to what I want. If I did not have to have the engine rebuilt again this summer ( lifter decided to disintegrate), HYD steering was next.
Keep it turn key for a while longer!!

I have a 2000 271 fastech and have done to my boat what you are looking to do to your boat. If you call formula they will tell you not to add anything more that 650 hp to your boat. I took my 500 hp and sold it. I had a 540 built fuel injected naturalyl aspirated. I have dual ram hydraulic steering, added 280 K-Planes, and had my gears in my drive kryo'd by Johh @ the bravo shop. This guy is good. I dyno'ed 647 horsepower @ 5600 with 685 ft lbs. torque. The best I have seen is with three guys and between 1/2 and 3/4 tank of fuel is 76mph. The boat does not chine walk and rides stabil. I would not skip a step if you want those speeds out of a 271. I have a 2000 271. The current motor is 800hp 540efi. I have not been able to get it out to tune in a new prop yet. When it had a 693hp 540 I could get low eighties GPS full of fuel with 4 people onboard and still some throttle left. My boat has full hydraulic steering and Merc 280s tabs. Bravo XR drive with 1.50 gears. The boat does chine walk pretty good at speeds over 75mph. I would say you need at least 625hp to pull 75mph at any time. Jeff Wurl

get outta here with the fountain talk. Fountains are good for one thing and one thing only, going fast. Sounds like you have the same boat I have and what you have now will run you an honest 64 on GPS. The quickest way to get to the speeds you want is a little boost.
