Default Attack Angle

I have a quick question about attack angle and taking on waves from the side. Is there a good trim setting for taking on waves from the side? I was watching this video and the "hop"or porpoise and it brought back the memory of crazy running from the day. The boat ran great in the slop - I think around 76 on the gps and I know that I could simply slow down and take it easy - but what fun is that? At the beginning of the run I was getting the boat out of the water a lot. Too much trim or just part of it?
It is a good video, from what seems to be any angry guy up at LOTO - my boat comes into play around the 11:37 mark.
Thanks for the advice as I am still trying to get the most out of the beak with the single step.
