Dual Batteries/Switches... How Wired???

I have a 98', 32' Fever that has 2 battery selector switches and 1 battery for each switch (2 batteries total). I am about to install several stereo amps and am trying to figure how how to wired to witch battery?
Each of my battery selector switches have the choice of "Off" "1", "2" or "Both". My question is, why isn't there just 1 switch with these selections since there are just 2 batteries? If i just put the port switch to "Both", is it really using both batteries even tho the strbd switch is set to "Off"?
The boat is out of my possession getting a new interior installed so some simple test are not an option right now.

There is one switch for each engine, so either engine can use battery 1, 2, or both. Usually the house loads and accesory switches are wired into the power for one engine, so whatever switch at off turns off power that is the engine/switch everything is connected to.
