Fountain spec is 7200 lbs dry with twin BBC, shipping "weight" of my steel dual axel Myco is 1800lbs.
Myco just sent me that information about a month ago.
I believe fuel is around 6.7 lbs per gallon and water 8?
Add the rest of the junk you carry. What is the rating on the Caddy?

My friend pulled his 32' fountain with his 07' Escalade. Pulled and stopped fine. But, the rear is air bag suspension. Computer first season, compressor and shocks second season, dually third season. Apparently the air suspension is very sensitive and all the bucking over works it. Another friend with a 35' had same problems with a hummer h2.

It won't be very stable. You may be ok to the ramp and back if it is a short distance and you aren't going very fast, but definitely not on the highway. My son towed a 21' travel trailer with a 2007 Tahoe and it was a handful on the road and that trailer doesn't weigh half of what your Fountain weighs.
Get a pick up. Even a long wheel base Escalade or Suburban is not an ideal tow vehicle because the distance from the rear axel to the hitch is much longer that it would be on a pick up, and that adds to the instability.

I have a 32 and before I could get insurance Quoted to me I had to sign a waver stating my 09 XL expidition was rated at 9300 tow rating.
Sure opened my eyes ! My experiance was that GM only would do it with the 2500 series andFord now can do it with the 1500 only with the 4.3 turbo at 7mpg.

I owned an Escalade. It is a very nice "car" that resembles a truck. It has the horsepower to tow but that is all. The suspension and brakes are not up to the task of towing large boats. Get at 3/4 ton truck at a minimum to tow the Fountain.
