Questions to 38EC owners

The A/C in my 38EC blows plenty cold and brings the temp down quick in the cabin, but the thermostat only allows A/C settings down to 77 degrees, so the A/C compressor cycles on and off keeping the cabin temp in high 70's. On hot humid days this is just barely adequate. Does anyone know if there's a way to adjust the thermostat lower than 77? I'd also like to know if anyone knows the brand of A/C unit Fountain used in their mid-2000 38EC's. I have no documentation on it.
Also hot water heater is showing signs of rust around its base. I need to see about getting it replaced soon. Does anyone know if this is a possible DIY job, or do I need to look for a shop for this replacement?

I ended up replacing my AC as it started freezing up, but I could control mine below 77. I did it myself, no issues. There is also a lot of room for storage under the bed where the ac is. I ended up installing a hinged door to all access and moved the ac to the side to allow easy storage. Replacing the hot water heater should be a pretty easy DIY. The hardest part is getting to it. Mine is located in the starboard rear corner of the engine compartment. There are tabs that are attached to the heater (mine is the square s.s. box) that is screwed down to the bilge. One tab in front and is easy to get to and one in the back adjacent to the transom that is more difficult to get to. Need to attach a couple of extensions to a Phillips screw driver as there probably isn't enough room to get between the heater and the transom. Disconnect the two water hoses and the 110 volt power feed and it is out. PM me some pics and I may be able to offer a little more guidance.
